I provide nutrition education to students and teachers including web sites as well as coordinate the school cafeterias as learning labs. My role encompasses working with the school cafeteria managers on sanitation and safety training as well as nutrition activities for the students such as tasting parties. Of prime importance is my responsibility in evaluating potential foods for school food service and ensuring that the products meet the USDA nutrition guidelines.
Keeping up with all the USDA regulatory changes!
Definitely! The greatest needs of students are related to nutrition and health. With the current emphasis on obesity in children and teens, ideally, a dietitian could work with a cluster of schools to provide education on eating habits and lifestyle management. Also, the number of students requiring special nutrition management such as those with diabetes is increasing.
When I first entered actual practice, I thought about only the clinical side. Now, I view it from a much broader perspective. There are so many areas where our expertise is needed. Having a varied employment background and transferable skills are important in today's marketplace.
Most recently, I learned how to roller skate (the old fashioned kind). My children made fun of me, but it didn't matter! I also do white water rafting and canoeing. I've had the best time! It's a great way to unwind.
